Flavors & Texture
Fufu (or Foufou) is the festive and Sunday dish par excellence in Togo. It is a heavy, smooth, elastic and creamy paste, obtained by vigorously pounding pieces of boiled yams in a wooden mortar using large pestles. Served hot, it is traditionally eaten with the fingers, taking small balls which are generously dipped in a fragrant liquid sauce.
