Flavors & Texture
Ayimolou is one of Togo's most popular and iconic street foods. It is a flavorful mixture of rice and red beans (or cornillas) cooked together. Its characteristic brown color comes from cooking the beans and, traditionally, adding a pinch of potash or sorghum stalks. Very nourishing and economical, it is consumed at any time of the day, from breakfast to dinner.
